Spiedies
Spiedies are a food unique to Binghamton. They are pieces of meat - traditionally lamb, but also chicken, pork and beef - that are marinated and then cooked on an open grill. Traditionally, spiedies are served on a slice of Italian bread with no condiments.
Though the exact "creator" of the Spiedie is has some debate, it is generally agreed that the large Italian immigrant community in Endicott was where the recipes originated.
Spiedies have been carried elsewhere by the diaspora of residents from Binghamton over the years, and many local vendors including Lupo's S&S Char Pit, the Spiedie and Rib Pit and the Rob Salamida Co regularly ship "care packages" to people all over.
Each year we celebrate our love of spiedies and throw the annual SpiedieFest and Balloon Rally, which has taken place since 1985.
